What's for dinner?


I made this for four: It was great, I served it with steamed broccoli and sweet and regular baked potatoes. I am stuffed!

 
 

Lemon and Olive Chicken
 
Serves 8
To make single servings: Cool the chicken, put each piece in its own freezer bag with some sauce, and press out the air before sealing. Individual portions thaw quickly.
 
 
8 bone-in chicken breast halves
 

Salt and pepper
 
3 tablespoons olive oil
 
2 lemons
 
2 onions, chopped
 
4 garlic cloves, minced
 
1 cup green olives, pitted and halved
 
2 cups chicken stock or reduced-sodium broth
 
2 cups water
 
1 teaspoons dried thyme
 
1/2 teaspoon crushed red pepper
 
  1.   Sprinkle chicken with 1 teaspoon each salt and pepper. In a large skillet, heat 2 tablespoons olive oil over medium heat. In two batches, sear the chicken, skin side first, until golden brown, about 3 minutes on each side. Transfer the chicken to a plate.
 
  2.   Cut lemons in half lengthwise and then into thin slices crosswise. If the skillet is dry, add the remaining tablespoon oil. Add the onions and garlic, and cook over medium heat until soft but not brown, about 3 minutes. Stir in lemon slices, olives, stock, and water. Bring to a boil, reduce the heat, and simmer for 10 minutes.
 
  3.   Place the chicken on top of the vegetables, pour in any accumulated juices from the plate, and sprinkle with thyme and crushed red pepper. Cover, and simmer until chicken is just cooked through, about 15 minutes. Serve immediately. Alternately, you can store the chicken frozen for up to 6 weeks; when you’re ready to serve, thaw the chicken, place in a pan with water to coat the bottom, cover, and simmer until hot.
 
    Per serving: 303 calories; 15.6 grams fat; 34.3 grams protein; 7 grams carbohydrates

The aboriginals I was teaching tonight tried to feed me turtle but I kind of declined!!  I ate a piece of some type of wattleseed cake instead which was really yummy but right now I'm just having some grilled cheese sandwhiches for dinner!

Spaghetti Pizza Pie

8 oz. spaghetti, cooked, drained
1/3 cup KRAFT 100% Grated Parmesan Cheese, divided
1 egg, lightly beaten
1 lb. ground beef, cooked, drained
2 cups spaghetti sauce
1-1/2 cups KRAFT Shredded Mozzarella Cheese
 

PREHEAT oven to 350°F. Toss spaghetti with half of the Parmesan cheese and egg. Place in 9-inch pie plate; press onto bottom and up side to form crust.
MIX meat and spaghetti sauce; spoon into spaghetti crust. Sprinkle with mozzarella cheese and remaining Parmesan cheese.
BAKE 30 minutes or until heated through. Let stand 5 minutes before cutting into wedges to serve.

Round Out The Meal
Serve with a crisp, mixed green salad, a whole-wheat roll and fresh fruit for dessert.

Special Extra
Spoon additional heated spaghetti sauce on serving plate. Top with a slice of Spaghetti Pizza Pie!

I had Spinach & Fetta Ravioli for dinner last night!  They feed me well here!  Tonight there is roast lamb and roast vegetables for dinner!  smile
