Favorite E-Z Recipies!!


Hey, we are hard working adults! (when not slacking off in here....). Sometimes when I get home from work late I am TOO DANG beat to put very much work into dinner, but I am so hungry I could eat a horse! (a red one! named vito! with a gimp leg!)


TONIGHT IS ONE OF THOSE NIGHTS! SO! With that in mind, I thought why not start a thread where we here could share our favorite E-Z recipies; the ones where you get a lot of BANG for your BUCK, where you could be sitting down to eat one of your favorite meals in half an hour or so...


In fact, often times when I cook during the week, these are the rules that I follow (because if I am cooking, I am usually already starving): 5 ingredients or less (simple) or 1/2 an hour or less (quick).


Now I realize that I am setting up a thread where some wise guy (riggs or mo) could go, for example:


My FAVORITE spaghetti recipie:


1. Brown meat.


2. Add sauce and heat.


3. Serve over prepared noodles.


That's not what I had in mind. What I had in mine is somthing like this!:


cajun pork tenderloin:


1 pork tenderloin


cajun seasoning


2 potatoes quartered


2 zuchinni diced


2 Tbsp butter


1. Preheat oven to 425.


2. Melt butter in microwave.


3. Rub pork tenderloin with cajun seasoning and place in a lighly greased baking pan.


4. Place the potatoes along the sides of the tenderloin, and place the zucchini on and around the tenderloin. Pour the butter over the vegetables.


5. Cook in oven for 30-40 mins, or until the temperature of the meat reaches 160.


6. Slice and serve!

JD's MAC-N-MEAT


3/4 lb lean ground sirloin


6 cups H2O


1 can stewed diced tomatoes


1 10 oz pack frozen spinach (thawed)


2 1 oz packs of onion soup mix


2 1/2 cups uncooked elbow macaroni


In a 3 qt pot or dutch oven, brown the sirloin over medium heat. Add the other ingredients and cook over medium-high heat. Bring to a boil, reduce heat to medium and simmer, uncovered, for 10 mins or until pasta is tender, stirring frequently. Feeds four/ 20 mins.

Bachelor's Beef Stew


3 teaspoons olive oil


1 lb pack of stir fry beef


1 pk of Freshlike Veggies for Stew


1 tsp dry thyme leaves


1 cup H20


1 pk brown gravy mix


Heat oil in a dutch oven/ 4 qt saucepan. Add meat cook/stir for 4-5 mins or until browned.


Stir in thyme and veggies.


In a small bowl, combine water and gravy mix, add to the pan and bring to a boil.


Reduce heat, cover and simmer 8-10 mins or until veggies are tender, stirring occasionally.


* Can substitute 1 can of V-8/tomato juice for the gravy mix

Grandma Riggs Famous Chicken Noodle Soup


Mix 1 Can of Campbells Condensed Chicken Noodle Soup with 1 Cup of warm water.


Heat on stove or in microwave until hot. 


Serve.


 


DEEEEEEEEELICIOUS with saltines!

Rebecca's Bean Burritos


1 can refried beans


1 jar chunky salsa


1 pack 8 soft tortillas


shredded cheddar cheese


sour cream (optional)


Mix beans and salsa in a microwave safe bowl, nuke for 2 1/2 minutes and remove.


Heat tortillias for 20 seconds and remove.


Add the mix and the cheddar cheese to the tortillias & wrap (or fold to allow for sour cream after heating).


Nuke for 2 minutes and serve. ( or add sour cream and wrap once heated, if desired, then serve).

Here’s an easy way to make scrambled eggs with that little extra…


2  Eggs


1 to 2  TBSP Philly Cream Cheese


Couple Pinches of Dill Weed


Pinch of Salt


Butter


 



  1. Mix eggs, cream cheese, & dill weed in separate bowl until most of the cream cheese is smoothed out (there will still be some lumps…it ok…just make sure they are small lumps)

  2. On Medium High heat, melt some butter to coat the bottom of the pan
Pour egg mixture into pan & cook until desired texture, stirring constantly (less time, wetter eggs, more time, tougher eggs) It usually takes about 3-4 minutes after Pan is hot to cook well, but use judgement…If you get brown ares, it’s past done & burning…

Noodles and noodles.  2 cans of chunky chicken noodle soup and 1 box of cooked rotini noodles.  Add the two and it's a meal for 4.

This is the greatest for me and not many dishes to do.


One or Two Pork Chops, simply fried to almost well done.


One Can of Campbells Cream of Mushroom Soup


One Can of Water


One and one half cans of Min. Rice.


When the pork chops are almost done, throw in the soup, water and rice.  Mix it aournd, with pork chops right in the middle.  Cover and simmer until the rice is soft.


Mostly I get too lazy to even put it on a plate and eat it right out of the frying pan.

Hey here is an EZ one the JD household has enjoyed on weeknights for years! E-Z Arabian night!


Hummus and Pita!


It used to be obscure, but now pretty much any quality grocery store will stock hummus in a variety of flavors- eggplant, dill, garlic, spinnach, plain. If you don't know what this is, its a chickpea-based spread that goes great on a pita. warm pitas in the microwave, spread with hummus, and then you can top with sliced tomato, cucumber, pickle, cheese...you can be creative. Wrap and Serve. With a side of couscous or yellow rice, you have yourself an authentic and satisfying Arabian-influenced vegetarian meal in 5 minutes.

Here's one we do once or twice a month.


Smoked sausage, 2 cans of Shellie Green Beans, 1-2 cans of little potatos.


Slice up the sausage, throw in the beans (juice too) and taters and bring to a boil.  Reduce heat for a few minutes and eat. 


Good quick eatin'

Pepper Steak Sandwich


steak chopped up into bite size pieces


onions, green peppers also chopped.


seasoning salt, cayane pepper, regular pepper.


cook meat in pan, throw in veggies, salt and pepper to taste.


toast steak bunsadd cheese and Bam!

J taters "named after my friend Jay" just experimenting on a camping trip.


potatoes, sliced up potato chip style


onion, seasoning salt, pepper, butter.


in tin foil or a foil bag combine ingredients, throw on the barbie or camp fire. Bam!

Here's one called "Rebecca's Bean Burritos"


Take 1 can of refried beans and 1/2 a jar of salsa. Mix together in a bowl and nuke for 3 mins.


Put this on flour tortillas and top as you see fit- cheese, sour cream, more salsa?


Wrap these up and nuke for another minute or so-BAM!

Anyone out there feel that good pasta sauce is beyond them?  Stuck in a Ragu world?


BREAK FREE!  SAUCE IS EASY!


In olive oil w/ FRESH garlic, fry up 1 lb. of meat, any will do but I recommend some style of pork.  Once cooked, dump in 1 regular can of diced tomato and 1 can of tomato paste.  Add some vinegar and red wine (inexpensive wine is fine for cooking), add seasonings.  It can be whatever you like, do it to taste.  I use basil, garlic and onion powder, salt, pepper, and a little chili powder.  Cover and turn heat to simmer.  Add water if needed for desired consistancy.


Just let that bubble away and make the resy of your meal.  The longer it stews the better off you are.  Leftovers?  Great!  Sauce is always better the next day.


OTHER HINTS:  If you use seafood, season carefuly.  If you use poultry, add something sweet, flavored coffee syrups work well.

I always just call this "Slop."


Brown 1 pound hamburger


Add 1 can cream of mushroom soup and 1/2 can of milk. Heat to bubbling (I sometimes heat it a little longer so it thickens a bit if I've added too much milk).


Serve over thick, toasted bread.  Reheats great!

Beef Au Jus (sounds fancy, but really isn't)


I prefer ingredients form the deli as it makes for a tastier sandwich:


Butter the inside of sub buns and sprinkle on some garlic and onion powder (or be ritzy and use fresh).  Layer with roast beef and sliced mozzerella.  Bake at about 425 until meat is warm and cheese is melted (usually about 5 minutes).


In the meantime, mix a packet of Au Jus seasoning with water and heat however the directions say.


To eat, dip the sandwich in the broth.  Tasty!

And my last one: Michelle's chili:


Brown a pound of hamburger.  (Optional, add a pound of venison and double the rest of the ingredients.)  I always drain and soak up all the grease from the hamburger.


In a nice big pot, add hamburger, 1 can of tomato sauce, 1 can of kidney beans (don't drain), 1 can of water (I usually use the tomato sauce can) or more if needed, a chili seasoning packet, extra chili powder, onion powder, and garlic sauce to taste, a tiny dash of cinnamon, and a tablespoon of honey.  Heat thoroughly (about 30 min.) or put it in a slow cooker.

Here's one I made tonight:


Pork Mexicana


1 lb pork for chop suey


1 small bag frozen corn


1 small jar salsa


1 small can black olives, drained


1 can black beans, drained


cumin to taste


3 servings prepared instant rice


-fry pork until its browned


-add salsa, corn, beans & olives & bring to a boil


-season with cumin and simmer for 5 mins


-add the cooked rice & mix

It might be a little too runny with that much salsa, Mz. A little less salsa, and cheese melted on top to hold it together and you're right on!

Dylan- ANYTHING from there is awesome stuff. If Riggs is around the studio (seems he always is) we'll get cheese sausage mushroom onion- or the peperroni special is good too. The manacotti dinner rocks too!
