On The Grill Yo


Hey the favorite dinner thread got me thinking- a few people mentioned grilled items- chicken and fish- I have not yet found a grilled chicken recipie that worked for me; and I am scared to try fish on the grill cuz I hear it burns real quick-

this isn't meat but it's good:  blob a big old portobello mushroom with barbeque sauce and grill on high heat.  it's good with steak.  like stack them when they're done and get them both in your mounth at once....  yum...

      OCEAN TROUT -wrapped in tinfoil with lemon , SnP, and butter. also try   KATFISH in tinfoil , baste with KATSUP first

    I have a friend who does a LOT of fishing and when those trout run he fills up my freezer !!  There great in the oven also , all you need is s n p , butter and lemon and you're in buisness, these fish are about 15 inches long cleaned, very few bones, great fillets to !!

I have a lot of them books Dylan- and the recipies sound good in theory, but I really like to get tried and true recipies from real people who have made these recipies their own, adjusted them to taste, and can provide some advice as far as pitfalls to avoid. The added extra of experience talking!

Do you have  a good recipe for summer salads? ..with hot weather here, those are always nice.

well when I grill out, a salad is nice, but I want it to be quick and easy as possible- simple spinnach leaves in a bag (they claim they are already washed, but the heck with that I let them soak)- toss in some baby carrots, a few cherry tomatoes with croutons & a dressing on top- and bam there's a salad that took no chopping whatsoever.

ew Dylan- I used to love to go there in high school-a buddy's girlfriend worked there and we ATE LIKE CHAMPS!!! (my girlfriend worked at McDonalds as I recall- a DISTANT 2nd Place) but the last time I headed to the one by Mayfair Mall (if its still even there) I saw the workers smoking drugs out by the dumpster- that was it. The good old days of the innocent 80's were over! The old stomping grounds got filled with punks.

We live in cow country. We have the Cattlemen's Club, Elk Creek Steak House, The Lucky 7 Steak House, Big Al's steak House, The Long Horn Steak House, Mad Mary's Steak House, are ya seeing the pattern here?


If you don't like steak this is not the place to live!

Dylan- I'd have to agree with you- but I really got to plug another (gasp) chain here- Outback Steakhouse- way out where Greenfield Ave meets Moreland. Quality Quality steaks out there! The Victoria's cut Tenderloin, done medium-well will melt in your mouth! I'l give credit where credit is due- Outback!

Dylan- no salad bar, but they do serve you a salad, they'll grind pepper on it for you if you like, its served crispy/cold etc.....man I am getting hungry to head out there!

Here's a quick and easy one. Grab a resealable bag. Open a bottle of Italian dressing. Fill the bag a quater to half and throw in chicken or pork chops. Throw it in the fridge for a day or two. Take em out slap em on the grill. I always take the left over dressing and baste the meat while it cooks. MMMMMMMM good stuff. I also like to take peppers, onions , mushrooms and tomatoes, cut em up and throw them on the grill. You can find a pan for grilling or a wire mesh flat panel that you can throw over the grill so the goodies don't hit the charcol. Man, this may be supper tonight!!!!

JD I am with the others on the best way to grill fish and chicken. My husband grills at least four or five days a week. He fishes almost every weekend, so we eat a ton of fish. Like suggested before, place the fish on top of the foil and just season with herbs and snp, place a few globs of butter in the middle and drizzle with lime or lemon juice. He then wraps it like a tent, so the heat can travel well throughout. He cooks it for about 5-7 minutes. For chicken, he too likes to marinade with italian dressing or bbq sauce. The trick to cooking chicken is to cook it on low, turn frequently, and cook for at least 40-45 minutes. Alright, bring on breakfast, all this talk is making me hungry!

I love Outback's chopped bleu cheese salad.  It's my favorite!


My favorite thing on the grill (or over the campfire) is shishkabobs!  Cut up some chicken, red, yellow, and green bell peppers, mushrooms and onions and get some cubed beef.  (Cutting up your own steak works too.)  Marinate them in a bottle of Catalina dressing overnight, skewer them, and cook them until the meat is done.  They're really messy to skewer, but I've tried doing them up and then marinating them, and it doesn't come out as well.  I love to cut everything up and stick them in a bowl to marinate and take them camping (I still put the bowl in the cooler, but the vinegar will help keep you ingredients from spoiling), and I cook them over the fire until they start getting a little burnt.  Perfect!
