Last night I realized that I have taken on too big of a project. I was planning to make fudge, chocolates, chocolate chip cookies, and cut out cookies and give them to people for Christmas. So far I have half of the fudge and half of the chocolates done. To stay on track, tonight I need to make the dough for the cut out cookies, make the chocolate chip cookies, the second half of the fudge, and some chocolates.
Today is the boy's last day of school for this year. He was bouncing off the walls last night and getting him going this morning was no problem. I'll guarantee you that he'll be "bored" either tomorrow or Thursday . . . "Can I open just ONE of my presents early?"
I had hopes for seeing the eclipse. At midnight, we had low, fast moving clouds with breaks that we could see through. I have NEVER seen the moon that bright. It was almost painful to look at with it reflecting the sun so directly back to us. I got a few pics I'll post in another thread. I did happen to wake up about 2:30 and stepped out the back door. It was WAY too cloudy then to see anything.

I was wondering when everyone's schools got out. There's a couple schools around here that close or delay for anything. This morning it's slushy, so on the radio they listed a couple schools that had a 2 hour delay, and I was surprised they were still open. The Bloomington schools, and all the schools I ever went to, closed the Thursday or Friday before the week of Christmas.
It was cloudy all night so we didn't get to see a bit of the sky. In fact, it had that glow of light bouncing between the clouds and the snow.
Mz - I feel your pain with the baking. I spent all day Sunday doing that and I'm not handing things out as gifts. I am simply taking some to places on Friday and Saturday and have brought some into work. I am also not quite finished baking. I want to try a recipe I found last week for chocolate caramel brownies. I want them to be fresh so I'm not making them until Friday morning (maybe Thursday night if inspiration strikes).
We had moon and relatively clear skies. I was awake at 1am. I wasn't staying up. The eclipse was due to start at 1:41am and last until 5:01am, with full eclipse for 72 minutes starting at 2:40something.

This profession is the epitome of left-brain thinking. Logic and thoroughness are two of the most important skills you'll need. But there is also passion involved: To enjoy the job, you must love numbers, particularly the practical application of numbers.
I should get a brain. And some logic. And some passion. I'm not sure I love numbers. Since I don't know what love is, I can't know whether that is true or not. And whoever wrote the article did not take into consideration that tax is not logical. Trust me.

Originally I wanted to wait until Thursday to bake the chocolate chip cookies so they'll be as fresh as possible. But I also need time to assemble the tins, and we leave Friday morning, so I think I need to leave Thursday night as gift wrapping night.
It is a big job, Mz. I give out a lot of baked goods around the holidays, sometimes as gifts. Over the years, I've considered doing more of that, but it does tend to take more time than I really have to get it done well. Sunday was a full day of baking for me, and that was just to take some stuff into the office , a couple gifts, and of course some for the family to enjoy.

This year I'm doing 6 small tins, 1 big tin, and 1 plate of goodies. Described like that, it didn't seem like too much. But then I counted up how many of each goody I wanted to put in each, and the total comes to 26 servings. And I'm counting chocolate chip cookies, cut out cookies, fudge, white chocolate, dark chocolate, milk chocolate, peanut butter trees and peanut butter stars all as different goodies.
I thought about getting rid of something, but if I did, I'd get rid of the most labor intensive object, which would be cut out cookies. But those are so Christmas, I don't want to leave them out. I might though.
I was debating making another batch of them, but I just can't seem to make me do it. You are right about them being labor intensive... and its not even so much the cutting them out as it is icing and decorating them.

I figure the cut out cookies are a 3 occasion job:
Tonight I'll make the batter and chill it. Which works better, rolling out the batter then chilling it in sheets, or chilling the batter then rolling it out?
Tomorrow I'll roll it out (unless I already did), cut them out, and bake them.
Thursday I'll decorate them. Although that conflicts with assembling the tins. Maybe I'll decorate them first, then wrap presents and put everything else in the tins, and put the cookies on top after the icing dries.
Hm, maybe I'll make the batter for both cookies tonight and bake them both tomorrow.
T'was the Tuesday before Christmas and all through the cube everything was stirring especially the mouse.
With a click here and a click there, spreadsheets magically appeared.
There were 36 consumer's use tax returns to be filed. As numbers were written on lines, the hum of the calculator could be heard as calculations were verified.
Add a few check requests and some back up and they were all good to go.
And as she forwarded the information the boss for review and approval, I could hear her exclaim, "Merry Christmas to MA DOR and to all in the department good day."

Mz... I've never tried rolling out the dough first before chilling them. It might be a good idea. I'm still pondering making another batch... especially since I went downstairs a bit ago and see that most of them are gone now. Apparently the wuzband believes that it is perfectly reasonable to eat a dozen cookies and call that a meal.
