CHILI RECIPIES!!


ITS THAT TIME OF YEAR! (maybe not if you are in california or florida)- but its time to (sadly) put the grill away! Fall has arrived! Its chili season! Fuzzy asked me if I had a good chili recipie, which I sent her. But I know there are sooo many different recipies out there- what's your chili recipie??


Heres Mine:


JD's Jammin Chili


1 1/2 LBS GROUND CHUCK
2 MEDIUM DICED ONIONS
1 4 OZ CAN DICED CHILI PEPPERS
CHILI POWDER TO TASTE
2 CANS STEWED TOMATOES- NOT DRAINED
2 CANS RED KIDNEY BEANS- NOT DRAINED
2 STALKS DICED CELERY
2 TBSPS OLIVE OIL


BROWN MEAT AND ONION IN OLIVE OIL IN A FRY PAN.
TRANSFER TO A 4 QT POT OR DUTCH OVEN, ADD REMAINING INGREDIENTS, STIR, BRING TO A BOIL, TURN DOWN HEAT AND SIMMER FOR AT LEAST 1 HR, COVERED. STIR OCCASIONALLY. CAN SERVE WITH CHEDDAR CHEESE AND/OR SOUR CREAM ON TOP.

TURKEY CHILI


1 lb lean ground turkey


1 can mexican style diced tomatoes


1 can of black beans, rinsed and drained.


1 can of whole kernal sweet corn, drained.


1 1-1/4 oz pack of dried chili mix


1/4 cup water


In a 3 Qt Pot, brown turkey over medium-high heat.


Add everything else & cook on low heat for 10 mins.

     at least we can open our windows  ...


    I like to use some Mcormicks seasoning ( in a packet ) .It's not to HOT but has a good


 taste . tried some 'award winning crap ' made by a guy from Texas , threw the WHOLE

VEGETABLE CHILI


1 28 oz can tomotoes, undrained


16 oz salsa


1 can black beans, rinsed and drained


10 oz frozen corn


1 cup sliced zucchini halves


1 tsp chili powder (or to taste)


8 oz shredded cheddar cheese


hot red pepper slices to taste


Bring tomatoes, salsa, beans, corn, zuchinni & chili powder to boil in a saucepan on medium-high heat.


Reduce heat to low, simmer 10 mins.


sprinke cheese in bottowm of serving bowls, add chili, top chili with cheese too.


*garnish with hot red pepper slices.

Poor Sparky!


I made Chili the other night so here is my recipe.


 


Garys Home Made Chili


4 pounds lean ground Turkey ( gotta be healthy)


6 cups hot water


4 tablespoons CHili Powder


4 tablespoons Garlic Powder


3 Tablespoons Paprika


2 tablespoons ground Cumin


4 tablespoons flour


 Combine Flour,Cumin,Paprika,Chili powder, and Garlic Powder in a small bowl. set aside.


Brown meat in a 6 quart pan,   Add dry mixture and stir well. Add water gradually ( may only take 4-5 cups.) turn to low and let simmer for 45 minutes. stirring occasionally.  add water as needed. Add extra Chili powder, Garlic powder and Paprika as desired for extra spiceyness.


May turn out kind of bland but you can also add 2 tablespoons Mustard for a little kick.

Most of my recipe is simple, but I throw in a couple non-conventional things that really spice it up. Okay, I'll give credit where credit is due, I stole this receipe from Mz (it's just her and her husband, so you may want to double the recipe if you're cooking for more than a couple people):

1 pound ground beef (get the best quality your grocery store offers)
1 teaspoon chili powder
1 teaspoon minced onion
1 can tomato sauce
1 can dark red kidney beans
Koger's chili seasoning packet
1 clove garlic
dash cinnamon
1 tablespoon honey
onion powder to taste
salt and pepper to taste
red pepper seasoning to taste

Brown the beef in the chili powder and minced onion, drain.
Add beef to pot with remaining ingredients and 1 can water (use the empty tomato sauce can). Do not drain the kidney beans, just open the can and throw the whole thing in. (Well, don't throw the can in.) Simmer for about 45 minutes, or until hot and desired consistency. Best served with buttery crackers.

When you get your chili made, as a side go with a caramel cinamon roll and an orange half. I know it sounds weird but trust me! Something about the three that brings the flavor out.

Crock Pot Chili

1 lb of ground beef
3 cans of chili beans, drained
3 cans of diced and stewed tomatoes (I usually get the kind for chili, it says it on the can)
chili powder to taste (I usually put in 3 to 4 tablespoons)
1 teaspoon of salt
1 to 1 1/2 teaspoons cumin seed
Chopped onion
Noodles (a handful)

Brown ground beef. Put ground beef and al of the other ingredients except noodles in crock pot. Cook on high for four hours or cook on low for eight hours. Add noodles a half hour to an hour before you eat it. If you like your chili juicy, leave out the noodles. I squish my tomatoes up because my hubby doesn't like chunks of tomatoes. I like this one because I can have my husband put it on while I'm at work and it's ready to go when I get home.

When I first got married, my husband asked me to cook chili. I opened a can. He wouldn't eat it. He said that it had to me homemade chili. I had never cooked homemade chili in my life. My mom's German, they don't have chili. My husband said his mom used a chili brick. I went and bought one. It was the worst chili I have ever tasted in my life. Greasy! Indeterminate meat! How sickening. Never again. I finally found this recipe and it's really easy. The best thing to eat with chili? I make chili and serve oatmeal raisin cookies for dessert. You won't have anyone bother you the next day because no one will want to be near you!

JD- please please don't say Fall is here.  It's not!!! But here's a chili recipe anyway cuz I like ya:


Spicy Cincinnati-style Chili ( I made this years ago & it's a recipe worth sharing)


2 lb grnd beef / 1.5 lb boneless pork cut into 1/2 inch cubes / 1 large onion chopped / 1-2 jalepenos seeded & minced / 2 cloves garlic crushed / 28 oz crushed tomatoes / 12 oz can of BEER from WISCONSIN / water / 2 pkge (1.25 oz size) chili-seasoning mix / 1/2 tsp grnd allspice / 1/2 tsp cinnamon / salt / 1 lb bow tie pasta / 1 cup shredded cheddar


In large skillet over high heat add ground beef, 1/4th at a time. Cook until browned, about 5 minutes. Srit constantly. W/ slotted spoon remove cooked beef to large bowl until all beef is cooked.  Add boneless pork cubes to liquid in remaining skillet and cook until even;y browned (about 5 minutes). Remove pork & add to beef. Add chopped onion, minced jalepeno peppe, and garlic to skillet. Cook 3 minutes or until onions aer tender stirring frequently. Return pork and beef to skillet & stir gently. Add tomatoes, beer, 1/2 cup H2O, chili-seasoning mix, allspice, cinnamon, and 1/2 tsp salt to meat mixture. Bring to boiling. Reduce heat to moderately low, partially cover and cook 45 minutes stirring occasionally. Meanwhile, in large saucepan bring 4 quarts of water w/ 1 tablespoon salt to boiling and add pasta. Cook 8=10 minutes or until al dente, drain and top w/ meat mixture. Sprinkle with cheese and enjoy!!

thanks, cheese I will add it to the chili section of the cookbook we are making! OH I SO KNOW FALL IS NOT HERE! NO WAY!! NO RUSHING THINGS! This thread was started in october of last year.
