Mexican Bean Dip Ideas?


We have a Mexican potluck tomorrow and I was volunteered for a bean dip.
Anyone have any good recipes?

here is mine. So simple but everyone loves it!

Mexican Dip


use an 8x11 cake pan and layer the following:


1 large can of refried beans


1 large bottle of salsa. I usually use mild, but it depends on what you want


1 med size tub of sour cream. (I sometimes add more) The sour cream with have to be somewhat softened or it wont spread very well.


Cover with shredded mexican/taco blend cheese.


Serve with tortilla chips. Scoops work well with this.

buy a can at the gas station. 3 times as expensive as the grocery store, and 3 times older, but usually there's no waiting in line.

Thanks for the idea, but I think I will go with Woo's recipe.

Sounds yummy! My recipe is almost identical to Woo's except I add shredded lettuce, black olives, and mild jalapenos on top to freshen it up.

Do they still have the warning on that saying people with penicillin allergies should not use?  Just curious; my husband brought some home a few years ago and I remember the label had that warning on it. 

I cheat when making bean dip.  I buy a can of bean dip, brown up a pound of burger, add the burger and one bottle of LaVictoria mild or medium Red Taco Sauce to the dip, put it all in a saucepan to heat it up, then transfer it to a crock pot to keep it hot.

Here's my favorite bean dip:

1 large can refried beans
1 medium bottle Pace Picante Salsa (I generally use the med. or hot)
1 small block Velveeta (cubed)
1 roll med. or hot pork sausage

Cook sausage (crumbled) until done. Combine with beans, salsa, and Velveeta chunks. Heat until warm and Velveeta is melted, generally this is best done in a crock pot.
