We had a really good dinner last night.

2 lb roast
2 onions
4 cloves garlic
salt
3 beef bouillon
2 cans rotel tomatoes with chili's drain most of liguid (or fresh tomoatoes and fresh chili's)


Boil roast in salted water, 1 diced onion and 2 cloves finely chopped garlic for 1-2 hours. Drain liquid saving about 1 cup of it for later use. Shred beef into fine shreads.

Brown remaining onion and garlic in oil....once browned add tomatoes and chili's let simmer a few minutes....add shredded beef. Using the cup on broth add three bouillon cubes heat until disolved, add to the meat mixture. Heat and salt as needed.


We had it on a pita, topped with sour cream, salsa, tomatoes, lettuce, cheese and jalapeno's. I could see using tortilla's as well.

we had a late breakfast and he cooked for an army. It just kept getting later and later so he decided we were snacking instead.

Oh no, I get what it is. You have to say Weight Watchers as 2 words, otherwise you have a t w a t in there.
