Polenta??


Anyone ever hear of this or have any recipies they like with it??

Polenta is made with either coarsely, or finely ground dried yellow or white cornmeal (ground maize), depending on the region and the texture desired. As it is known today, polenta derives from earlier forms of grain mush (known as puls or pulmentum in Latin or more commonly as gruel or porridge) commonly eaten in Roman times and after. Early forms of polenta were made with such starches as the grain farro and chestnut flour, both of which are still used in small quantity today. When boiled, polenta has smooth creamy textures, caused by the presence of starch molecules dissolved into the water.

I am trying this for what I believe is the first time ever this evening. I bought a package of pre-cooked polenta. Per the packages suggestion, I am trying the recipie of cutting 1/2 inch thick polenta circles, topping with refried beans, cheese, red onions and tomatoes and cooking until heated through.

pip what I have is pre-cooked & like in a tube, almost like a summer sausage would be wrapped. I just cut slices off of it. its weird. can't decide if its more like a bread or a pasta. I woulda just been better off making nachoes instead.bleh.gif

aw crud thats right. its touting itself as a pure/healthy food, so I was totally thinking that maybe this was something in your diet MZ. Totally forgot about the corn aspect as being a no-no for you.cry.gif

I've never been overly fond of polenta, mostly because of the texture. I did try a friend's recipe once that was pretty good. She brushed the slices with olive oil and broiled them for a couple minutes then topped it with marinara, fresh basil and prosciutto. Brioling the slices made it firmer and crisper. Not bad.

hey maybe broiling was what these things needed. mleh. I totally understand why there's not a craze for this stuff. like the gnocci craze of 2004.smile.gif that was CRAZY!!
