The tenderloin was awesome! I need a tarter apple next time, maybe Granny smith- I had fuji, too plain. But it was good! I liked the way the sweet complimented the pork.

Here is another one!


Norms yummy rotel ( my partner makes this all the time. Its meal in itself)


1 can cream of mushroom soup


1 big block Kraft cheese


2 cans rotel


1 pound ground beef


dash onion powder


brown ground beef in a skillett


put blockk cheese in a Crockpot or cooking pot and let melt


add beef, cream of mushroom soup, rotel,1 dash onion powder to kraft cheese


stir frequentley for 30 min or until cheese is all melted


serve with tortilla chips or your fav.


Enjoy


It will fill you up. great snack food tho

O.K. I said I would post some, so here they are:

Low Carb Chicken Alfredo

1 box Dreamfields Penne Rigate
I jar Ragu Garlic and Parmesian Sauce (white alfredo sauce)
1 can chicken or if you are really creative and have time, cut up chicken
1 dash of pepper

Boil the noodles per the directions on the box. Drain the noodles, but do not rinse. In the same pot you boiled the noodles in, warm up the chicken for a couple of seconds and break up the big clumps. Add sauce to chicken and add a dash of pepper (or to taste). Heat for a couple of seconds. Pour noodles into pot with sauce and mix it up. You now have chicken alfredo and it's low carb.

Low Carb Goulash or Spaghetti

1 box Dreamfields Penne Rigate or Spaghetti Noodles
I jar Ragu Low Carb or No Sugar Added Red Sauce
1 lb ground beef
1 dash of garlic

Boil the noodles per the directions on the box. Drain the noodles, but do not rinse and return to the pot. Brown ground beef and drain fat. Add sauce to meat. Add a dash of garlic. Mushrooms can also be added. Pour sauce into pot with noodles and mix it up.

Low Carb Pork Chop Dinner

Pork Chops
1 can Condensed Cream of Mushroom Soup
1/2 box Dreamfields Penne Rigate

Brown pork chops in a skillet sprayed with non-stick cooking spray on medium heat. I add a dash of pepper to the top of the pork chops. Boil the noodles per the directions on the box and drain. Return the noodles to the pot. After all the pork chops are browned, remove from skillet. Pour condensed soup into skilllet and add a half to 3/4 can of water to soup. Let warm up and stir until all clumps are gone. Add pork chops back to skillet and cover with soup mix. Cover skillet and simmer on low for about half an hour. Remove pork chops from skillet and pour leftover soup mix over cooked noodles in pot and mix together.

I'll add more later. I know they're simple and you've probably thought of them before, but I thought I would post them.

Thanks Trish, they sound good. But wouldn't it be easier just for you to come over and cook all the time? Then I wouldn't worry about a thing.


By the way JD, you will be so proud of me. Guess what I bought while I was out last night? Asparagus! I went to Costco (the bulk store) and they has asparagus $4.99 for 2.25lbs. Nice price so I bought a bunch. I can't wait to try them on the grill like you suggested. I just have to get the propane tank refilled first.

LITTLE EMILY'S FROGMORE STEW!


(saw this one on the counting thread- I'll have to try it!)


Boil a large pot of water, salt and old bay (seafood seasoning, add mini corn on the cobs, boil, then add smoked sausage, boil, then add shrimp, boil 5 more minutes. Drain and feast. 


*Frogs are optional.

It is soooo easy and delicious! Keep a roll of paper towels on the table and serve with cocktail sauce.


Here are the exact directions:


 


3/4 lb. shrimp per person
1 ear of corn per person
3 to 4 pieces of Hillshire smoked sausage per person


In a very large pot, boil water with shrimp boil, salt and pepper. Add corn, boil 15 to 20 minutes. Add sausage, boil 10 minutes; add shrimp, boil 8 to 10 minutes. Remove from water and prepare for a feast.

O.K. Here's my latest creation.

Low-Carb Chicken Noodle Soup

4 cans of chicken broth
1 can of garlic flavored chicken broth (Swanson is what I use)
1 can of water
3 carrots, sliced (depends on your preference)
3 or 4 stalks of celery, sliced (depends on your preference)
1 can of chunk chicken (Again, Swanson chicken breast)
1 box Dreamfields penne rigate noodles
1 1/2 teaspoon, or to taste, parsley or chervil (I use chervil, but they pretty much taste the same)
Salt and pepper to taste

Combine all off the broth and one can of water in a pot. Bring broth and water to a boil. Add vegetables, cover and reduce heat to simmer. Simmer for 15 minutes. Remove cover. Add chicken, chervil and noodles and simmer for about 10 minutes, or until noodles are tender. If desired, add salt and pepper. Enjoy!

here's another one to add! food for days!! or for up to 5 people. With simple kitchen staples like minute rice and spices already in stock, this meal cost me $12!! and could have easily stuffed 5 people, each with a glass of wine even. I am stunned!


 


I bought:


a large green pepper for $1.29


1 small red onion for .55 cents


4 bulk white mushrums for $1.40


a garlic clove for .36 cents


a bottle of on sale cabernet for $5.00


8 pack of small flour tortillias for $1.22


A big chicken breast on sale for $1.93


I made 4 kebobs of chopped green pepper, red onion, and mushrooms. These were sprayed with Pam fat-free cooking spray.


The big chicken breast I cut in half. this was seasoned with olive oil, cumin, black pepper, the garlic that I diced up, and red curry powder.


I made a marinade out of salsa that I had, garlic & cumin & curry, with a splash of lemon juice.


I wrapped 5 tortillas in aluminum foil.


I prepared 3 servings of instant brown rice on the stove as I chopped this stuff up.


 


I went to the grill and layed down the chicken breast and the 4 kebobs. cooked and cooked, kept an eye on things. the vegatables got done pretty quick, so eye-balling these I removed them as they began to look done. meanwhile I placed my marinade onto the grill to warm. Once warm, I began to baste the chicken breast. turn, check the temp of the breast, marinade, wait, cook some more, marinade some more.


I took 1/2 the remaining marinade and poured this over the vegetables that I had since de-skewered & mixed.


when the breast was done, I put this on the serving platter and began cutting up with the vegetables, as the wrapped up tortillas were warmed on the grill.


Once I was done I took the chopped meat, vegetables, tortillias and remaining marinade inside. The remaining marinade was poured over the rice I had prepared earlier. I reheated this rice in the microwave, and set on down to dinner.


tortillas, a big bowl of spiced up rice, and another huge bowl of grilled chopped chicken breast, red onion, a diced green pepper and mushrooms.


A bottle of cheap but good table wine to boot. Fantastic meal!

about 160 here sparky, 156 when laying off the beer. Riggs asked me the same thing sunday. I think its because I only eat 2 meals a day weekdays (skip breakfast) and then only eat good stuff (not overly-processed foods) and I stop once the hunger is satisfied. I rarely snack in general. If I do, its non-fat pretzles. And on weekends when I do have breakfast, its more of a brunch thing that holds me until dinner...thats about it.

I also read something where you should eat a huge-A$$ breakfast guilt-free to fuel your day, and then eat lightly the rest of the day- the big dinner at night will kill ya when all you got after that is a few hours of tv and then sleep- you arent burnin them calories off at all. Eat breakfast like a king and dinner like a pauper. I might have to adjust my grill time to the am!

Enjoy your asparagus. Did you know that it effects the smell of your pee after you eat it? I didn't know that until someone told me. I thought there was something wrong with me and didn't put 2 + 2 together (eating asparagus + smelly urine).

I had this for supper tonight:

Thin sliced beef/stir fry beef
green bell pepper
onion
mushrooms
butter
salt & pepper
bread/buns
cheese

I slice everything up, including the meat, and stir fry it in some butter until the meat is cooked through and the veggies are limp. Then I pile it all on a bun with some cheese (I put it directly on the cheese so it gets all melty.) Ir's very quick and easy.
