Soups and Salads


Hey Framers, I know there are some decent cooks on the Forum and with hot weather here or just around the corner (depending where you live)....I was looking for some good soup and salad recipies.  Ladies and gentlemen, start your taste buds.

D, theres an herb salad that comes in a tub in most grocery stores, thats right near the bagged salad. not a big fan of bag salad, but the tub of herb salad is so good & has so many flavors, that a salad dressing ALMOST is not necessary.

Not really a "recipe" but...

We chop up a tomato, cucumber, and some red onion. Then we add some feta cheese and black or green olives. Then we put some Paul Newman's Own Oil and Vinegar Dressing on top. Yummmmmmmmmmmy!

Bruschetta-Style Salad

10 plum tomatoes, diced
3 cloves garlic, minced
3/4 cup fresh basil leaves, coarsely chopped
8 ounces fresh mozzarella cheese, cut into bite-sized pieces
1/2 cup mixed olives, sliced
1 tablespoon capers, rinsed and drained
1 teaspoon fresh lemon juice

1/3 cup extra-virgin olive oil

Salt and pepper to taste
Mixed Salad Greens


In a medium bowl, mix together the tomatoes, garlic, basil, mozzarella cheese, live, capers, lemon juice, olive oil, salt, pepper, and mixed salad greens until combined. Cover and let set at room temperature until ready to serve.

Serve on mixed salad greens on individual salad plates.

I love this one, for a cooked alternative...

Ceviche de Camaron (Shrimp Ceviche ****tail)

Ceviche de Camaron (Shrimp Ceviche ****tail)

Ingredients

1/2 cup chopped onion
6 cups water
3/4 cup fresh lime juice, divided
1 pound medium shrimp
1 cup chopped peeled cucumber
1/2 cup ketchup
1/3 cup chopped fresh cilantro
2 tablespoons Mexican hot sauce (such as Tamazula)
1 tablespoon olive oil
1/4 teaspoon salt


Preparation

Place chopped onion in a colander, and rinse with cold water. Drain.

Bring 6 cups water and 1/4 cup juice to a boil in a Dutch oven. Add shrimp; cook 3 minutes or until done. Drain and rinse with cold water; peel shrimp. Combine shrimp and 1/2 cup juice in a large bowl; cover and chill 1 hour. Stir in onion, cucumber, and remaining ingredients. Serve immediately or chilled.


Yield

6 servings (serving size: 1/2 cup)

This evening I will be having the bagged salad that is called "taco toss". It is pretty good by itself, but I tend to add hamburger meat to it. It gives the salad a little more depth if you will.

If I pick up the ceaser salad in a bag, I usually add a boiled egg and grilled chicken to it. I just need something more to my salad so it stays with me through the evening.

I consider this a bean salad and make it as a side dish, but it is good as a light meal...
If i don't have hominy, i substitute shoepeg corn. I also rinse the canned ingredients after draining them...

Oklahoma Caviar Recipe

Ingredients
· 2 (16 oz) cans black-eyed peas (drained) .
· 2 medium tomatoes (sliced) .
· 2 (16 oz) cans hominy (1 can each of yellow & white, drained) .
· 2 garlic cloves (sliced) .
· 1 1/4 c onions (sliced) .
· 1 medium green bell pepper (sliced) .
· 1 (16 oz) bottle Italian dressing .
· 2 medium jalapeno peppers (sliced) .
· 1 tsp sugar .
· 1 tbsp parsley flakes

Directions
· Step #1 Mix all ingredients thoroughly, stir in the salad dressing.
· Step #2 Chill overnight (best)! Drain if needed.
· Step #3 Serve with tortilla chips.
· Enjoy the Oklahoma Caviar recipe

I like this salad when it's hot outside.  I substitute fresh, cut green beans for the cannelini beans. 

Three Bean Salad

1 15-oz can cannellini beans, rinsed and drained
1 15-oz can kidney beans, rinsed and drained
1 15-oz can garbanzo beans, rinsed and drained
2 celery stalks, chopped fine
1/2 red onion, chopped fine
1 cup fresh, finely chopped flat-leaf parsley
1 Tbsp fresh finely chopped rosemary

1/3 cup apple cider vinegar
1/3 cup granulated sugar
1/4 cup olive oil
1 1/2 teaspoons salt
1/4 teaspoon black pepper

Method

1 In a large bowl, mix the beans, celery, onion, parsley and rosemary.

2 In a separate small bowl, whisk together the vinegar, sugar, olive oil, salt, and pepper. Add the dressing to the beans. Toss to coat.

3 Chill beans in the refrigerator for several hours, to allow the beans to soak up the flavor of the dressing.

Serves 4 to 8.

lick.gif i love houmus dip! here's a simple recipe...

Houmous dip

Ingredients:
400g can chick peas
2 cloves of garlic, chopped
lemon juice
olive oil and paprika to serve
salt and freshly ground black pepper

Directions:
1. Drain the liquid from the chick-peas into a small pan and add the garlic. Cook over medium heat for 7-8 minutes, uncovered, until the garlic is softened. Leave to cool then add to the chick-peas and whizz in a food processor until smooth.
2. Season to taste with lemon juice, salt and pepper. Serve in a bowl with a little olive oil poured over and sprinkle with paprika.

I tried this the other day and my picky husband even liked it:

2 cans tuna
1-2 cups organic garbanzo beans
mayo (to taste)
raisins (to taste)
cashews/walnuts (to taste)
chopped cucumber

Drain tuna. Mix it all up & enjoy w/ crackers. It is really filling!

I know it has ham, shell roni's, tomatos, radishes, but I'm not sure what the sauce is. smile.gif

no.gif Its macaroni salad


2 cups of shell roni's cooked & rinsed
about half a bottle of french dressing
miracle whip (about half as much french dressing)
salt and pepper to taste
if its a bit sour some french dressings are add a little sugar
2 cans ham
2 tomatoes chopped
radish chopped fine
* mom uses peas...I hate them so I dont use them.

mix it up and eat it cold.

My macaroni salad is a simple recipie. Just elbow macaroni, chopped onion and celery, mayo and salt and pepper to taste. I don't measure the mayo. I am not big on mayo, so it is rather light.

My cucumber salad is also simple. Cucumbers, red onion (sliced) water, white vinegar, dash or two of salt, about the same of sugar. This is another recipie I don't measure. I assemble it, test it and find out what it needs if it isn't quite right.

Pasta salad is simple too. But again no measuring. Just whatever looks good for uniformness. Twist pasta, ham, cheese, onion, celery, pepper (two colors), cherry tomatoes, carrots, broccoli, cauliflower and I simple use a nice house Italian for the dressing. I think that is everything.
