Your Favorite Soup


Everyone loves a good soup! Especially in winter! What's your favorite soup? Got a brilliant recipie for it that you can share with the Freeze Frame Radio family??

I don't have any special recipe or anything posh like that, My favorite soup is plain old Campbells tomato soup in a can, but it has to be the the fat free stuff at the moment, with some nice wholemeal bread to dip in!

We just had our SOUPER BOWL party at work on friday. There were 14 crock pots of soup to sample and vote for your favorite. The one I chose was an italian sausage, spinnach, white bean concoction. At first I did not think I'd like it, but it was awesome!


Another person made potato soup, but it had bacon in it- AWESOME!!!

My grandmother taught me a chicken noodle soup receipie that she swears was handed down from her grandmother.  It was a recepie that was used as some of my relatives used as they headed from the east coast to settle in the West.


I use chicken now, but grandma said any meat could be used.  I am not in to possum or squirrel.


In a large pot boil the chicken for one hour so the meat is almost falling off the bones.  In that water is also several stalks of celery and an onion. Use what ever seasoning you prefer, I just add a little white pepper and some parsley flakes.


As that is finishing, beat eggs--depending on how many noodles you want--I use one dozen.  Gradually add flour and a little salt.  Keep mixing the flour in until the dough is no longer sticky.  Taking pieces of the dough, roll it out on a floured cutting board.  I then roll it like a cinnamon roll.  You can cut the noodles as thin or thick as you want.  They are really great thick, about one half inch thick.  I now add a bag of frozen peas and carrots, after removing the chicken, celery and onion.


Drop the noodles in the water and continue to cook over medium to medium high heat.  Cut up the chicken into whatever size you wish and drop back into the broth and noodles.  When the noodles all rise to the surface, it is done.


Makes a great meal--I taught it to my kids and they love to make it, while I hate cleaning up after them.

This is one we have on New Years Day, it's for good luck for the upcoming year.


Sauerkraut Soup.  It sounds bad but man is it delicious!!!  I'll have to post the receipe.  JD this would be a good one for your next Souper bowl party.

Soup is good at any time of the year. I don't know that I have a fovorite. I like to keep the variety flowing. I have basics though. Tomato, tomato rice, new england clam chowder, chicken noodle or rice, cream of mushroom, baked potato with bacon and cheddar and italian wedding are just some of the ones I enjoy. Plus you can cook with so many Campbell's cream based soup. Although it may not really count as a soup, nothing beats Mom's beef stew.  Mmmm.

I love homemade french onion soup with a crust of bread and swiss cheese melted on it.  Yum!  My mom also makes what she calls "war food" (she grew up in post-war Germany), it's potato soup with mixed vegetables and kielbasa sausage in it.  It's delicious.  She also makes a kind of lentil soup that you serve over homemade German noodles (called spaetzle), it is fantastic, but it's one of those things that either love it or you hate it.  I love soups, but they really don't fit into my low carb lifestyle, so I don't eat them much.  I miss my soups!

Creamy Chicken Noodle from Campbells.  Not every grocery store carries it, though.


I also love the sausage soup from Olive Garden (I can't remember what it's called though, something in Italian!).


And I haven't met a soup from Panera that I haven't liked.  I think the creamy chicken and wild rice is my favorite, with their french onion soup making a close second.


I'm hungry...

Cuff 'Em N' Stuff 'Em

  YUMMMMMMMY!!!


 



Ingredients

  • 3 cups water
  • 1 14--ounce can reduced-sodium chicken broth
  • 1 10-3/4-ounce can reduced-fat and reduced-sodium condensed cream of chicken soup
  • 2/3 cup uncooked wild rice, rinsed and drained
  • 1/2 teaspoon dried thyme, crushed
  • 1/4 teaspoon ground black pepper
  • 3 cups chopped cooked chicken or turkey (about 1 pound)
  • 2 cups shredded fresh spinach

 
Directions

1. In a 3-1/2- or 4-quart slow cooker, combine the water, broth, cream of chicken soup, uncooked wild rice, thyme, and pepper.


2. Cover and cook on low-heat setting for 7 to 8 hours or on high-heat setting for 3-1/2 to 4 hours.


3. To serve, stir in chicken and spinach
