Happy Easter to everyone in FFR Land. It started raining in my neck of the woods around 11:30 last night. Looks like it will be an all day affair we definitely need it. My in-laws are coming over for supper. Usually Im very stressed out when I have to cook for a holiday, but today Im feeling very calm. My ham is in the oven -- I will glaze it with a pineapple & brown sugar glaze. The angle food cake is cooling -- I will slice and fill with whipped cream mixed with prepared sugar free vanilla Jell-O pudding and fresh sliced strawberries. I have the asparagus prepped and on ice it will be sautéed in olive oil with onion, minced garlic and a bit of bacon, then topped with grated Parmesan cheese. My cheats are -- Uncle Bens rice; bagged salad; canned yams; and brown & serve rolls.

I feel like I cheated on the whole meal. I couldn't get the kids to commit to what time they would be here, or even one of them to commit that they WOULD be here until this morning. The one that did commit days ago has changed times at least 3 times... the latest of which was this morning. Hence, I decided to not go crazy with what is now lunch.
Anyhoo... the menu is spiral sliced ham, cheesy mashed potatos, corn, and dinner rolls. For dessert, I made a cake shaped like an Easter Bunny head and bought some ice cream. Had I known for sure, there probably would have been some sort of salad, more side dishes, fresh baked dinner rolls (as opposed to store bought) and home made ice cream.

Mema declares it another successful Easter celebration with the family. Minimal mess in the house, no injuries, all eggs successfully located, and only one kid had to get timed out.

Happy Easter everyone! We went up to our cabin Friday morning, stayed for the weekend, just got home about an hour ago. It felt wonderful to get out of town for a couple of days!!
