Easy Recipes II


The last thread was too large.


 


I made this tonight for a church function tomorrow. Sounds and smells good!!


 


Easy Greek Chicken


 


6-8 either boneless or bone-in skinless chicken breasts


6-8 diced and peeled potatoes (quartered to fifty cent pieces)


1 small bottle of Ken's Ceaser salad dressing


1/2 tbls of Cavener's Greek Seasoning


 


In 9 X 13 dish, arrange chicken and potatoes


Cover with bottle of dressing


sprinkle with seasoning


cover and marinate for a few hours


bake covered at 350 for 45 minutes or until done


every 15 minutes or so, baste with drippings


remove foil a few minutes before removing from the oven to brown the chicken

very cool!


Actually I have the means to create one where I work- Nothing too fancy, card stock covers, maybe in color, and just the recipies on a 60# bond paper with a tape binding or coil.....I like this idea, and I like that these things would go to helping COTA!

having in-laws over for supper.  we're feeling like burgers and they are my recipe test monkeys, so i think i'll try this one on them...

The Ultimate Jalapeno Bacon Cheeseburger
INGREDIENTS:
1 tbsp. salt
1 tbsp. ground pepper
2 lbs. ground beef
8 jalapeno peppers, minced (if you dare)
2 cups of Monterrey Jack cheese, shredded
1 egg (to hold things together)
8 slices of Pepper Jack cheese
16 slices of pre-cooked bacon
8 hamburger buns

DIRECTIONS:
In a large bowl, combine the beef, jalapenos, Monterrey Jack cheese, egg, salt and pepper. With your hands, combine together until all ingredients are distributed equally throughout. Make patties, approximately eight of them. Grill to your liking and place on hamburger buns. Top with Pepper Jack cheese and bacon.

My manager sent me this for the Christmas holidays, and i figured this qualifies as an easy recipe...{{lol}} I'm sure you've heard this before. 

Jose Cuervo Christmas Cookies

1 cup of water

1 tsp baking soda

1 cup of sugar

1 tsp salt

1 cup of brown sugar

4 large eggs

1 cup nuts

2 cups of dried fruit

1 bottle Jose Cuervo Tequila

Sample the Cuervo to check quality. Take a large bowl,

check the Cuervo again, to be sure it is of the highest

quality, pour one level cup and drink.

Turn on the electric mixer... Beat one cup of butter

in a large fluffy bowl.

Add one teaspoon of sugar. Beat again. At this point

it's best to make sure the Cuervo is still OK, try another

cup..just in case.

Turn off the mixerer thingy. Break 2 leggs and add to

the bowl and chuck in the cup of dried fruit, Pick the fruit

off the floor..

Mix on the turner. If the fried druit gets stuck in

the beaterers just pry it loose with a drewscriver.

Sample the Cuervo to check for tonsisticity.

Next, sift two cups of salt, or something. Check the

Jose Cuervo. Now shift the lemon juice and strain. Add

one table. Add a spoon of sugar, or somefink. Whatever you

can find. Greash the oven.

Turn the cake tin 360 degrees and try not to fall over.

Don't forget to beat off the turner. Finally, throw the

bowl through the window, finish the Cose Juervo and

make sure to put the stove in the dishwasher.

Oh man, since I've had to change my diet, I make so much from scratch now.  And since I hate to cook, I make everything as easy as possible!  Tonight I made:

Chicken Macaroni Alfredo
makes 1 serving

1 chicken breast
olive oil
garlic powder
onion powder
italian seasoning
1 cup macaroni
2 tbs butter
1/4 cup heavy cream
1/4 cup parmesan
1 tbs basil
salt
pepper

Cook the chicken breast in olive oil; season with garlic powder, onion powder, and italian seasoning.

Boil macaroni according to directions.

Melt butter.  Add cream, parmesan, basil, and salt and pepper to taste.  Bring to boil, simmer 1 minute.  Add macaroni and cut up chicken.

It was yummy, even if I did burn a couple noodles and part of the chicken!

You guys might already have this one, but I love this for parties.

Cheese Potatoes

9 x 13 pan....disposable foil pan is great--no clean-up

32 oz. package diced frozen potatoes - thawed
1 cup diced onion
1 10 3/4 oz. can cream of chicken or cream of mushroom soup
16 oz. carton of sour cream
1/2 cup butter - melted
8 oz. package shredded cheddar cheese

Mix all ingredients together; bake for 1 hour at 375.

It's kind of rich, but people really seem to like these.

Here's a recipe for our Green Bay Packer's fan...straight from the NFL webpage:

Green Bay Kielbasa

Vincent and fellow tailgaters from Hofstra University in New York


Now traditionally, I've always used my uncle's concoction of a sauce for the Green Bay. This dates back to college, where this delight of a sandwich was created at 5am one summer morning when a friend of mine and I returned from a night out in Buffalo. Originally, we fried this sucker up on a range stove and iron skillet- it tasted fantastic, and since then it's moved to the BBQ.

Hillshire Farms Kielbasa (any variation)
White American cheese, sliced and NOT processed!
Long French bread, hard style without seeds
special BBQ sauce, ours is a proprietary blend mixed up by my uncle, prepared in the summer, settles in time for the fall.

Stoke up the grill; old-fashioned briquettes are favored as we're purists here. Take the Kielbasa link- split the horseshoe in half so you have two lengths. Take the links and split them up the middle- wing out length, but keep it together so it could fold.

After a couple of minutes on the grill, place the white American slices in the folds of the kielbasa. Let them melt a little.. Add the special sauce on top.

Cook the sausages a bit; let them brown and the cheese melt. Baste the links with some more sauce.

Split open the French bread. You may add some sauce so the sausage sits on a bed of it.

Strawberry Dream Pie
 
SHELL:          (2)  Graham Cracker ready crust
 
FILLING:      (1) 10oz. Pkg.  Frozen Strawberry Halves (unsweetened)
(2)   6oz. Pkg.  Light Strawberry Yogurt
(1)   3oz. Pkg.  Strawberry Jello (or equivalent SUGAR FREE)
(1)   8oz. Pkg.  Light Cool Whip; partially thawed.
Mix FILLING ingredients in a medium bowl until well blended.  Spread evenly in each SHELL.  Freeze for (4) hours before serving.
 
This is a Heart Friendly Desert.

Mackie's Asian Coleslaw

8-10 servings                                                      time to make 15 min prep
1 package coleslaw
1 package ramen noodles (chicken or creamy chicken, reserve flavor packet for dressing)
1/2 cup almonds
3-4 sliced green onions


DRESSING

2 tablespoons sugar
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons sesame seeds
1/3 cup vegetable oil
1 tablespoon sesame oil
3 tablespoons rice vinegar
  1. Mix dressing ingredients together.
  2. Refrigerate 1 hour.
  3. Put cole slaw, onions, almonds and crushed Ramen noodles in large bowl.
  4. Pour dressing over and serve.

Grilled Beef Satay

1 pound beef tenderloin, cut into 2-inch strips
20 wooden skewers, soaked in water 30 minutes
1 cup plain yogurt
1 teaspoon freshly grated ginger
1 teaspoon minced garlic
1 tablespoon curry powder
1/2 lemon, juiced
Vegetable oil, for grilling
Cilantro leaves, for garnish

Thread the beef onto the soaked skewers, working the skewers in and out of the meat so that it stays in place while grilling. Combine yogurt, ginger, garlic, curry powder, and lemon juice in a shallow platter and stir to combine. Place the beef skewers into the yogurt marinade and turn them until they are well coated. Cover and let the meat marinate in the refrigerator for up to 2 hours. Place a grill pan over medium heat and brush it with oil to prevent the meat from sticking. Grill the satays for 3 to 5 minutes on each side, until nicely seared and cooked through. Serve piled on a large platter garnished with cilantro.

A frriend of mine made the grilled beef satay and it was delish! She said the yogurt marinade is good for chicken too, and she used it for a veggie pakora dipping sauce as well.

For the salad:
2 small to medium heads Boston lettuce, discard any wilted leaves
1 Hass avocado, pitted
1 large bunch scallions, thinly sliced
Leaves from 1 bunch cilantro, finely chopped

For the dressing:
2 limes, juiced
1/3 cup extra-virgin olive oil
1/2 teaspoon salt
1 teaspoon sugar
About 20 grinds fresh black pepper
1 tablespoon whole-grain mustard

Pull the lettuce leaves from the head, rinse gently under cold water, and lay out on clean towels to dry. Use a spoon to remove the flesh in 1 piece from each half of the avocado. Thinly slice the avocado flesh into thin wedges.

Whisk together all the dressing ingredients.

Arrange the lettuce leaves on a plate and top with the avocado wedges, scallion, and cilantro. Finish with a healthy drizzling of the dressing.

3 tablespoons good olive oil
2 teaspoons minced garlic (2 cloves)
2 pints cherry tomatoes or grape tomatoes
2 tablespoons chopped fresh basil, plus more for garnish
2 tablespoons chopped fresh flat-leaf parsley, plus more for garnish
2 teaspoons chopped fresh thyme leaves
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper


Heat the olive oil in a saute pan large enough to hold all the tomatoes in one layer. Add the garlic to the oil and cook over medium heat for 30 seconds. Add the tomatoes, basil, parsley, thyme, salt, and pepper. Reduce the heat to low and cook for 5 to 7 minutes, tossing occasionally, until the tomatoes begin to loose their firm round shape. Sprinkle with a little fresh chopped basil and parsley and serve hot or at room temperature.

This recipe makes a large bowl of potato salad-perfect for a summer family picnic. Once you bring it to a party, expect that you will be asked to bring it every time.


  • 5 lbs. red potatoes
  • 1 lb. fresh green beans
  • 1/2 Cup olive oil
  • 2/3 Cup red wine vinegar
  • 1 1/2 tsp. TURKISH OREGANO
  • 1 1/2 tsp. salt
  • 3/4 tsp. GROUND BLACK PEPPER
  • 2 14 oz. cans artichoke hearts packed in water, drained and quartered
  • 1 medium red onion, sliced into thin rings

Wash potatoes, place in a large pot covered with cold water. Bring to a boil over medium-high heat. Boil the potatoes until just tender, but be careful, it's easy to overcook them. It takes about 30 minutes of boiling time depending on the size of the potatoes. When cooked, set in cold water to cool. When cool enough to handle, peel and quarter the potatoes and put in a large bowl. You may have to cut some of the potato quarters smaller, depending on the size of the potatoes. They should be about 1 1/2 - 2 inch pieces. Cut the ends off of the beans. While the potatoes are cooking, bring a separate pot of water to a boil, add green beans and cook 5-7 minutes, depending on how large and thick the beans are, then drain and rinse in cold water. Add green beans to the potatoes. Drizzle the oil and red wine vinegar over the potatoes and beans. Sprinkle the OREGANO, salt, and PEPPER over the top and toss lightly. Add the drained and quartered artichokes and the onions to the bowl and toss to coat. Serve right away or cover and refrigerate. Toss again before serving.

Prep. time: 15 minutes
Cooking time: 30 minutes
Serves: 10-12

This sounds good!  Think I'll try it tonight since I have all these fresh cherry tomatoes from the farmer's market.  smile
