really? peanut butter and bacon? bleh.gif buttered?

I had heard of peanut butter and bananna sammiches, and tried that once. I remember thinking it wasn't gross as I thought it would be; the flavor melded well and sort of became a new flavor altogether, but I never tried it again.

Made this last night to compliment grilled chicken.  Super easy.  All my test monkeys liked it -- even Jacob who almost NEVER eats vegetables (he had 2 servings).



Ingredients:
1 pound thin asparagus spears, trimmed and
cut in half
1 tablespoon extra-virgin olive oil
2 teaspoons minced garlic
1 large tomato, seeded and chopped
1 pinch salt and pepper to taste
Directions:
1.Place the asparagus in a large skillet and fill with about 1 inch of water. Cover the pan and set over high heat. When the water comes to a boil, cook for 2 minutes or until the asparagus is bright green and almost tender.
2.In a separate skillet, heat the oil over medium heat. Add the garlic; cook and stir for 1 minute. Add the tomato to the skillet and cook for about 1 minute or until heated through. Season with salt and pepper. Add asparagus to the pan and cook for about 2 minutes, until hot.

Haven't made this one yet, but sounds super easy and yummy if you like lemon.

LEMONADE PIE

Ingredients:
*  1   graham cracker pie crust
*  1   14-ounce can sweetened condensed milk
*  1   6 ounce can frozen lemonade concentrate, thawed.
*  1   8 ounce container Cool Whip, thawed

Preparation:
*  Beat together condensed milk and lemonade
*  Fold in Cool Whip
*  Pour into pie crust
*  Freeze 3-4 hours until firm.

I made the Lemonade Pie this weekend -- actually, I ended up with three pies.

I followed the recipe exact for the first, but ended up with about 1 cup mixture leftover.
Then I followed the recipe exact plus added (1) 16 oz container no sugar added frozen strawberies, thawed and the leftover cup from the previous mix. I got two pies out of that and some mix leftover.

We tried the Strawberry Lemonade Pie, and it was yummy.

I had Mr. DS take the other to work. We have yet to try the Lemonade Pie...

I made one Thursday night. Had some of it Friday. It was good. I had mixture left over too. Couldn't figure out why it was so thin and a little runny. I just figured it out when I reread the recipie. You were supposed to put it inthe freezer, not the fridge. Stupid me. no.gif

The good thing is I made a lime one Sunday night and did put it in the freezer. I figured it would be better that way and then it wouldn't run. Go figure.

It is still untouched in the freezer. I think I will have some tonight. Maybe it needs some whipped cream too. lick.gif After you mentioned putting strawberries in yours, it sounded better. I was going to take the easy way out and see if I could find strawberry-lemonade or raspberry-lemonade concentrate for the pie. I didn't find it so I went with regular lemonade and then limeade for the the second pie.

I wonder if it would also be enjoyable with some whipped cream. Maybe tonight I will try a slice with it. It'll have to wait until after I mow the lawn, have some dinner and pay the bills though.

Do I dare try this?

Black Bean Brownies

Ingredients:
14 oz can black beans
4 medium eggs
1 cup Splenda
2 Tbsp olive oil
3 Tbsp cocoa
1 tsp vanilla
1 tsp baking powder

Directions:
1. Blend all ingredients in blender until smooth.
2. Pour in greased 8" x 8" pan.
3. Bake for 30 minutes at 350 degrees F.
4. Enjoy!
